Nutrition in Epigenetics covers recent progress in the role that nutrition plays in the regulation of epigenetic processes and their inheritance. The first section of this book covers the fundamental principles of epigenetics; the second covers the role of nutrition in epigenetics, including maternal-child nutrition, role of specific nutrients, and nutritional epigenetics and disease; and the third presents current models being used to research the interactions between nutrition and epigenetics and the methods that are available to ascertain epigenetic changes.
