Fertilization and Phytochemicals in Broccoli and Cauliflower : Impact of nitrogen and sulphur fertilization to the content of phytochemicals in broccoli and cauliflower

This scientific monograph is focused on the impact of nitrogen and sulphur fertilization to the content of selected phytochemical compounds in broccoli and cauliflower. Nitrogen and sulphur are important elements from aspect of quantity and quality of vegetable yield. Brassica vegetable species (broccoli, cauliflower etc.) are characterized by beneficial chemical composition and content of health-promoting antioxidants, especially glucosinolates (sulforaphane), vitamin C (ascorbic acid) etc. These phytochemicals help to prevent our body against various civilisation diseases - many cancer types, cardiovascular and other health troubles. Nevertheless, we are evidences of lower vegetable consumption in Slovakia. Thus, it is necessary to promote higher vegetable consumption and find ways how we could optimize or increase content of phytochemical compounds in vegetable. Reviewers of scientific monograph: doc.
