Use of new technologies in food industries is a modern attitude well noticed recently. Utilizing new technologies such as the Nano- technology or biotechnology could solve many of drawbacks in food industries. Nano- technology in fact covers the control or manipulation of a material in Atomic, molecular or macromolecular scales in which the particle affecting the materials function has a size of around 100 Nano- meter or less. Thanks to the nutrition value of aquatic vertebrates and their short preservation time due to fast microorganism growth rate and rottenness, the importance of coating in packaging can be inspected with two main aspects. Firstly, marketing of the packed product, which is deemed to be transported from the north of Iran to the capital and from the capital to other countries. Secondly, the covering, which affects the durability and the organoleptic properties of the product (i.e. taste, odour, colour, appearance, texture). Nano-packaging is among the novel packaging technologies used for increasing the quality and safety of food materials. Nano-coating used in Nano-packaging is an enormous revolution in the export of spoilable products.
