Essential Oils Encapsulation Technologies : Application to Cloves

Many essential oil constituents are volatile, poorly aqueous soluble and chemically unstable. Carrier systems including cyclodextrins, micelles, liposomes, nano- and micro-particles and supramolecular systems were emerged to allow their wide use in food and pharmaceuticals. The book provides an overview on the delivery systems applied to clove essential oil, chosen as a model.
